Fast, Frugal & Delicious: Capellini in Garlic Sauce



Twenty minutes and just a few ingredients will produce a delicious dinner for your family.
I estimated ours cost less than $2 and it's two nights of dinner!

Capellini in Garlic Sauce
Sauce
1/2 cup olive oil
6 cloves garlic
Salt and pepper to taste (1/4 teaspoon)
2 cups water
Parsley

Brown garlic in the oil and salt & pepper. Set aside to cool. Once cooled, add the water and about a tablespoon dried parsley (or fresh if you have it). Bring to a boil then simmer for fifteen minutes.
While the sauce simmers get your pasta cooked! 1 pound Capellini pasta cooks to al dente at around 4 minutes.

Pour simmered sauce on pasta and serve! Garnish with parsley and Parmesan cheese to fancy it up if you want.

Let me tell you about the time I concocted my own crock-pot recipe. 

Almond Garlic Chicken

That sounds delish, right? Me, being the Julia Child that I am, put chicken breasts, garlic cloves, and almond pie filling in the cooker. The aroma was wonderful. The meal tasted like...um, how should I put this...it tasted like I rummaged through a restaurant dumpster that hadn't been emptied in a month.  After half a bite, all the contents of the crock pot were thrown away in bio hazard bags!

Yes, my husband loves to tell that story. I've learned my lesson. Anything for Pie  use only for desserts!


Frugal=Homemade Sausage

Homemade Sausage on the Cheap!

We had a huge zucchini, large bell pepper, and onion from the garden and thought, some Italian sausage would go great with these goodies. So we found a recipe and bought the needed ingredients.

I have issues with raw meat, so it was the Hubs job to make the sausage. The jokes were a flowing from me as he squished the sausage ingredients together...come on, Giuseppe was making Italian Sausage, he was asking for it.

To my point. It turned out fabtacular! He cored out the zucchini, stuffed it with the sausage, baked it, covered it with homemade marinara sauce and shredded mozzarella cheese.

The best part? Making our own molto buono sausage cost $1.71 a pound! Around here if you find good Italian sausage at $2.99 a pound it's a great deal! We ended up with little over 5 pounds of sausage plus about a pound of "rib tips" to use later.

Yes, it took some time to make, fortunately we have the Kitchen Aid attachments which made it a ton easier, but in the end it was worth it as we enjoyed the meal with Friemly and beaming with pride of our Frugal-Fantabulousness!

Another Frugal Feast!

Once again, another frugal dinner success! For $6.00 we have 2 nights of dinner for the 3 of us! That's right, a $3.00 dinner tonight. For less than 1 value meal at that fast food joint with the clown a pseudo healthy meal was created.  Here it is: (And yes, my hubs created a delish dipping sauce for our falafel!)



Fried Falafel with fresh made Naan and a Parsley Lemon dipping sauce, served with a scoop of sour cream, fresh radishes, and red bell pepper strips.

(Except for the falafel-I buy the box mix you just have to add water to!)

Help! I need a recipe!

I need a recipe for a good sauce to use on falafel & naan. All I can find are ones that have yogurt or tahini and I don't have either. I've hit a wall, am exhausted from looking on the web and need to get the naan fried before it rises to the size of weather balloons.


Can anyone point me to a good recipe?
